Ingredients Cherry Chocolate Cupcakes: • 2 eggs • 3 0z chocolate, finely chopped • 2 tbsp vegetable oil • 2 tsp white vinegar • 1/3 cup unsweetened cocoa powder • 3/4 cup warm water • 16g plain flour • 155g sugar • 1/2 tsp salt • 1/2 tsp baking powder • Ingredients for garnishing: • ½ cup Chocolate Chips • 3 cups of sugar • 1 cup cream • 1/2 cup butter • a pinch of salt • 1/2 tsp vanilla extract • 1 cup of cherries Method of Cherry Chocolate Cupcakes: In a mixing bowl add flour, sugar, salt and baking powder and whisk it well. In another bowl add eggs, vinegar, and vegetable oil and vanilla essence and whisk together and set aside. Now melt chocolate chips. After melting add cocoa powder and hot water and mix it well to get a smooth paste. Place it into the refrigerator to chill it for 20 minutes. Now add chocolate mixture into flour mixture and mix well. Pour the mixture into cupcake moulds, before adding mixture into cupcakes moulds add some butter into the moulds. Now place the cupcakes try into the preheated oven at 350C. Bake them for 19 minutes. After backing allow them to cool in baking tin for few then put to a wire rack for completely cool. Now melt the chocolate chips and add into the cream and stir well to make a smooth paste. Put the mixture into the refrigerator for cooling until it gets thick. Mix butter and salt then add vanilla essence, red food color or cherry juice and sugar powder and mix. Now decorate your cupcake with the topping and place cherry on the top of it to make it more colorful.
